Knight Steak with Catapult Balls

Knight steak

  • 3500 g Entrecote
  • 1 pinch Salt
  • 1 pinch Pepper

Catapult balls

  • 5 piece Tomatoes
  • 5 piece Potatoes
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 piece Truffle butter
  • 50 ml Olive oil
  • 10 g Basil
  • 20 g Parmesan
  • 0,25 piece Garlic
  1. Briefly rub the steaks with salt and pepper and grill them indirectly in the smoker (or locomotive grill) with beech wood (i.e. not on a direct flame). Pre-cook the potatoes for 30 minutes, wrap them in aluminum foil and cook them in the grill for approx. 20 minutes. Cut open and drizzle with a little truffle butter and salt. Hollow out the tomatoes, reduce the contents in the pan with garlic, olive oil, salt and basil to taste. Finally add the chopped Parmesan and pour back into the hollowed out tomato. Wrap the raw tomato and its contents in aluminum foil and let it cook in the grill for about 20 minutes.
