Knuckle of Pork in Aspic with New Potatoes

The perfect knuckle of pork in aspic with new potatoes recipe with a picture and simple step-by-step instructions.

  • 1 Small can of pork knuckle in aspic 200 g (from private house slaughter!)
  • 300 g Small new potatoes
  • 1 tsp Salt
  • 2 tbsp Mayonnaise
  • 1 Tomato
  • 1 Basil leaves
  • 2 big pinches Coarse sea salt from the mill
  1. Brush the potatoes well, cook in salt water (1 teaspoon salt) for about 20 minutes and drain. Serve pork knuckle with the new potatoes, mayonnaise (approx. 2 tablespoons), garnished with tomato and basil leaves. Sprinkle the jacket potatoes with 2 big pinches of coarse sea salt from the mill.
