Kohlrabi Carpaccio

Ingredients for 4 servings:

  • 2 kohlrabi
  • 300 ml vegetable stock
  • 400 g cream cheese
  • 50 g herbs, mixed, fresh, chopped
  • 1 tsp black pepper, ground
  • 4 tbsp olive oil
  • 1 tsp lemon juice

Peel the kohlrabi and cut into approximately 2-3 mm thick slices. Blanch the slices in batches in a shallow pan for 30 seconds. Let cool on a kitchen towel. Mix the cheese with the herbs and pepper. Arrange the kohlrabi slices on plates and drizzle with olive oil. Season with salt and pepper. Place the cream cheese in batches in a small colander, press down lightly, and tip out onto the kohlrabi slices. Sprinkle with coarsely ground pepper. Drizzle with lemon juice, if desired.
