Ingredients for 4 servings:
- 1 kohlrabi
- 3 carrots
- 1 onion(s)
- 250 ml vegetable stock
- 100 g cream
- 150 g herb cream cheese
- salt and pepper
- Parsley, fresh
- Chives, fresh
- Oil for frying
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Dice the kohlrabi, slice the carrots thinly, and finely slice the onion. Briefly fry the vegetables in oil. Add the hot vegetable broth and simmer for 10 minutes. Either puree half of the kohlrabi in a blender and stir it back into the broth, or puree the carrots and stir in. Then stir in the cream cheese, top up with cream, and season with salt and pepper. Tip: You can also substitute cauliflower for the kohlrabi. It tastes delicious with all kinds of pasta and potatoes.
