Kohlrabi – Carrot – Salmon – Gratin

Ingredients for 4 servings:

  • 500 g jacket potatoes, from the previous day
  • 500 g kohlrabi
  • 3 carrots
  • 250 g salmon fillet(s) (frozen or fresh)
  • 200 g smoked salmon
  • 1 liter béchamel sauce
  • Fresh herbs to taste
  • 2 tbsp Parmesan, grated
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat the oven to 200 degrees Celsius and grease a baking dish. Peel and wash the kohlrabi and carrots, then cut them into small pieces. Blanch them in boiling salted water for about 3 minutes. Slice the potatoes and place them in the baking dish as the first layer, seasoning with salt and pepper. Add half of the vegetables. Add the chopped salmon to this layer. Then add another layer of potatoes and finish with vegetables. Season each layer with salt and pepper and sprinkle with fresh herbs (e.g., parsley or chives). Finally, pour the béchamel sauce over the potatoes, sprinkle with some grated Parmesan cheese, and bake in the oven for about 30 minutes.
