Grandma's Eclairs

Ingredients for 1 servings:

  • 125 g flour
  • 70 g butter or margarine
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 250 ml water
  • 4 eggs
  • 2 packs of vanilla pudding powder, as well as milk and sugar
  • 1 pack of chocolate glaze, dark
  • some butter

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 50 minutes

Bring the fat, salt, vanilla sugar, and water to a boil. Stir in the flour to form a ball, then let it cool slightly. Stir in the eggs, one at a time. Using two tablespoons, spread the dough out onto the baking sheet (approx. 6 cm long and 2 cm high pieces). Bake at 200°C (top/bottom heat) (not fan-assisted oven) for 40-50 minutes (maybe less time, depending on your oven’s instructions). Do not open the oven halfway through! Let it cool in the oven. For the filling, prepare the pudding as usual and add a knob of butter to the warm pudding. Let it cool, stir, and fill the eclairs, which have been cut open like a roll. Cover with dark chocolate glaze.
