Kohlrabi Saltimbocca with mashed potatoes

Ingredients for 4 servings:

  • 750 g potatoes
  • 2 kohlrabi, 700 g
  • 2 tbsp oil
  • 3 cloves garlic
  • 5 tbsp olive oil
  • 175 ml milk
  • Salt
  • Pepper, colored, from the mill
  • 100 g Parma ham
  • 1 bunch of basil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel, wash, and chop the potatoes. Cook in boiling salted water for about 15 minutes. Peel the garlic. Press into the olive oil and sauté until translucent. Drain the potatoes, add the milk and garlic oil. Bring to a boil, and mash to a puree. Peel and rinse the kohlrabi, then cut into 1/2 cm thick slices. Fry in the hot oil over low heat, stirring occasionally, for about 5 to 10 minutes. Season the kohlrabi with pepper. Arrange the Parma ham and a few basil leaves on top. Chop the remaining basil and scatter over the top. Serve everything.
