Ingredients for 4 servings:
- 600 g zucchini, cleaned, diced or sliced
- 1 shallot(s), finely diced
- 1 garlic clove(s), chopped
- 2 tbsp olive oil
- 1 tsp vegetable broth, granulated
- 1 tbsp curry powder (Old English style)
- Paprika powder, sweet
- Herbs of Provence
- 1 cup of crème fraîche or sour cream
- salt and pepper

Sauté the diced shallots and garlic in olive oil until translucent. Add the zucchini and fry lightly. Add the broth, herbs, and spices, and simmer for about 10 minutes over low heat. Stir in the crème fraîche and season to taste.
