Ingredients for 4 servings:
- 2 onions (vegetable onions)
- 4 tbsp oil
- 500 g bell pepper(s), yellow
- 500 g bell pepper(s), red
- 4 cloves garlic
- 2 beefsteak tomatoes
- 1 sprig(s) rosemary
- 1 orange(s)
- 250 g sheep’s cheese
- 250 g black olives
- Salt and pepper, freshly ground black
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Sauté the roughly diced onions in hot oil until translucent. Meanwhile, halve, deseed, wash, and dice the bell peppers. Add the bell peppers and crushed garlic to the onions and simmer in a covered pan for 10 minutes. Dice the peeled tomatoes and add them to the vegetables along with the orange juice and chopped rosemary. Season with salt and pepper and simmer for another 10 minutes. Sprinkle with crumbled feta cheese and olives before serving. Serve with flatbread, rice, or garlic bread.
