Kritharaki Salad

The perfect kritharaki salad recipe with a picture and simple step-by-step instructions.

Dressing:

  • 200 g Tsatziki
  • 1,5 tbsp Ajvar
  • Salt pepper

Pasta:

  • 200 g Kritharaki
  • 2 Tomatoes
  • 1 Red Paprika
  • 125 g Corn
  • 100 g Feta
  • 1 Shallot
  1. Cook the pasta in enough salted water for about 12 minutes, drain and allow to cool.
  2. In the meantime, cut the pepper, tomato, shallot and feta into small cubes.
  3. Put these ingredients and the corn in a bowl and stir.
  4. When the kritharaki have cooled down, add them to the bowl.
  5. Mix together the tsazsiki and ajvar. Season with salt and pepper and pour over.
