Ingredients for 2 servings:

  • 3 bell peppers in red, yellow and green
  • 2 large onions
  • 2 cloves garlic
  • some oil, virgin coconut oil for frying
  • 150 ml soy cream (Soy Cream Cuisine)
  • some herbal salt
  • Pepper, freshly ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

vegan – a quick vegetable side dish

Remove the seeds and light-colored cores from the peppers and cut into strips. Peel the onions and slice lengthwise. Peel the garlic and thinly slice. Heat coconut oil in a pan and sauté the onion and garlic. Add the soy cream and peppers. Bring to a boil and cook for about 10-12 minutes. Season with herb salt and pepper. Serve with rice or noodles.
