Ingredients for 4 servings:
- 1.2 kg potatoes
- 250 g kale, from the jar
- 2 tbsp oil
- 50 ml plant drink
- salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Peel and dice the potatoes. Boil in a pot of salted water until tender. This will take 15-20 minutes, depending on the potato variety. Drain the water, add the plant-based milk and oil, and mash everything thoroughly. Then add the kale and mix. Place the pot on the stovetop briefly and heat everything through. Season with salt and pepper. Vegan bratwurst or vegan bacon are good protein-rich side dishes. I served them with homemade kidney bean balls.
