Ingredients for 4 servings:
- 4 kumquat(s), cut into very fine strips
- 2 tomatoes (e.g. “Romana”) flesh only, finely diced
- 100 g melon(s), in fine cubes or balls
- 100 g carrot(s), finely grated
- 2 m.-large spring onions, cut into small pieces
- some garlic, very finely chopped
- 1 chili pepper(s), red (without seeds)
- 2 tbsp syrup, (elderflower syrup) *
- 4 mint leaves, very finely chopped
- 2 sprig(s) thyme, stripped
- 6 basil leaves, finely torn
- e.g. salt (fleur de sel)
- n. B. Pepper, black
- 4 tbsp olive oil
- some lemon peel, grated

Press the cores of the tomatoes through a fine sieve, reserving only the juice. Dressing: Mix the tomato juice, elderflower syrup, and olive oil well. Season with fleur de sel and pepper. Add the prepared herbs (lemon zest, mint, thyme, and basil) and marinate the salad.
