Ingredients for 4 servings:

  • 1 large onion(s)
  • 400g corned beef
  • 1 kg potatoes
  • 50 g fat
  • 6 peppercorns
  • 1 tsp mustard seeds
  • 4 carnations
  • 1 bay leaf
  • 1 tsp mustard
  • Vinegar
  • 4 eggs
  • 1 can fish (fried herring fillets)
  • 1 jar beetroot
  • Cucumber juice

Dice the onion and fry. Dice the corned beef, add it to the onions, and fry. Boil the potatoes with water, salt, and a bay leaf. Put the spices in a long tea bag and tie the bag with string so that it can be removed when the potatoes are tender. Drain the potatoes, reserving the water. Mash the potatoes in a food processor and add the corned beef and onions, stirring with the potato juices until the desired consistency is reached. Season to taste with a little vinegar and pickle juice. This dish goes well with fried eggs, beets, and pickled herring fillets. It’s easy to prepare ahead of time.
