Ladder with Caramelized Carrots and Mashed Potatoes
The perfect ladder with caramelized carrots and mashed potatoes recipe with a picture and simple step-by-step instructions.
Ladder:
- 2 Spare ribs (740 g and 648 g) heartily marinated
- 4 tbsp Rapeseed oil
- 1 arc Parchment paper
Caramelized carrots: (here for 3 people)
- 500 g Bunch of carrots
- 1 tsp Salt
- 1 tbsp Butter
- 1 tbsp Rapeseed oil
- 1 tbsp Liquid honey
- 4 big pinches Coarse sea salt from the mill
Mashed potatoes: (here for 3 people)
- 600 g Potatoes
- 1 tsp Salt
- 1 tbsp Butter
- 4 tbsp Cooking cream
- 3 big pinches Coarse sea salt from the mill
- 1 big pinch Nutmeg
To serve:
- 4 Stalk Parsley for garnish
Ladder:
- Place the ladder with the bones facing down on a baking sheet lined with baking paper and bake in the oven at 175 ° C for about 40 minutes. Take out, cut into pieces and bake in the oven for about 5 minutes using the grill function.
Caramelized carrots: (For 3 people!)
- Peel the carrots while leaving the greens to stand for about 1 cm, cook in salted water (1 teaspoon salt) for about 8 minutes and remove. Heat rapeseed oil (1 tbsp) and butter (1 tbsp) in a pan and slowly fry / braise the carrots. Sprinkle with liquid honey (1 tbsp) and season with coarse sea salt from the mill (4 big pinches).
Mashed potatoes: (For 3 people!)
- Peel, wash and dice the potatoes (600 g) with the peeler. Boil the potato cubes in salted water (1 teaspoon salt) for about 20 minutes, drain through a kitchen sieve and return to the hot pot. Add butter (1 tablespoon), cooking cream (4 tablespoons), coarse sea salt from the mill (3 big pinches) and nutmeg (1 big pinch) and work through / mash thoroughly with the potato masher.
Serve:
