Lamb chops with goat cheese

Ingredients for 4 servings:

  • 100 ml olive oil
  • 1 tsp black pepper, coarsely ground
  • 3 cloves garlic, quartered
  • 2 tbsp rosemary
  • 1 tbsp thyme
  • 2 bay leaves
  • 8 lamb chops
  • Salt
  • Pepper, from the mill
  • 1 tbsp mustard
  • 150 g goat’s cheese, cut into 8 or 16 slices as desired
  • 30 g breadcrumbs
  • 1 tsp thyme, fresh
  • 1 tsp rosemary
  • 60 g butter, cold

Instructions

Working time approx. 30 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 30 minutes

a super delicious oven version

Combine the oil, pepper, garlic, rosemary, thyme, and bay leaves. Brush the meat with the mixture, cover, and marinate in the refrigerator for at least 4 hours. Heat the herb oil in a pan and sear the chops for 2 minutes on each side; season with salt and pepper when turning. Place the meat slices in an ovenproof dish, brush with the mustard, and arrange the goat cheese slices on top. Mix the breadcrumbs with the thyme and rosemary and place 1 heaped teaspoon each on the goat cheese. Place a slice of cold butter on top. Place the whole thing in the oven preheated to 250°C and bake on the third shelf from the bottom for 5 minutes. Tip: A true dream with potato gratin and chard with coriander!
