Ingredients for 4 servings:
- 750 g lamb
- 6 tbsp olive oil
- ½ liter of water
- 1 can of tomato paste (80g)
- 2 tbsp vinegar (red wine vinegar)
- 1 pinch of caraway, ground
- ½ tsp cinnamon, ground
- 500 g shallot(s) or small onions
- 50 g sheep’s cheese
- Salt and pepper, black

Stifado is a goulash-like dish from Greek cuisine (it can also be made with beef). What makes it special is the spicy feta cheese. A dish for those who prefer hearty dishes. Cut the meat into 5cm cubes. Heat the oil in a large, shallow roasting pan and add the meat. Fry for 10 minutes until crispy and brown. Add the water, tomato paste, red wine vinegar, caraway seeds, cinnamon, salt, and pepper. Bring to a boil, pour over the meat, and cover. Cook over low heat for 60-90 minutes (also works well in the oven at 150°C). Peel the shallots and add them to the meat. Cook over low heat for another 25 minutes. Cut the feta cheese into 1/2cm cubes. Add it. Let stand for 3 minutes until it begins to melt. Season the stifado to taste.
