Lamb with Beans Wrapped in Bacon and Pasta
The perfect lamb with beans wrapped in bacon and pasta recipe with a picture and simple step-by-step instructions.
For the lamb:
- 2 tbsp Honey
- Salt
- Pepper
- 1 Pc. Freshly squeezed lemon juice
- 1,5 kg Lamb hip
- 6 Pc. Fresh apples Boskoop
- 2 Pc. Onions white
- 1 Pc. Clove of garlic
- Oil
- 1 liter Cider
- Sprigs of thyme
- Coriander
For the beans wrapped in bacon:
- 500 g Runner beans
- 1 packet Bacon
For the pasta:
- 4 Pc. Egg yolk
- 1 Pc. Egg
- 2 tbsp Olive oil
- Salt
- 400 g Flour
For the lamb:
- Marinate the lamb with honey, salt, pepper and lemon juice for at least 2 hours.
- Peel the apples and cut the onions and garlic into cubes.
- Fry the lamb all over in a pan with oil. Add onions and garlic. Add the chopped apples, fry briefly, deglaze with cider and bring to the boil.
- Season to taste with thyme, salt, pepper and coriander and simmer for 2 hours at 180 degrees (convection).
- Pour the stock through a sieve and stir into a sauce. Season to taste with salt and pepper.
For the beans wrapped in bacon:
- Boil the beans, strain and wrap in bacon / bacon. Then fry in the pan until the color you want.
For the pasta:
- Mix all ingredients together until you have a smooth dough. The dough can then be processed further.
