Lamb with Beans Wrapped in Bacon and Pasta

The perfect lamb with beans wrapped in bacon and pasta recipe with a picture and simple step-by-step instructions.

For the lamb:

  • 2 tbsp Honey
  • Salt
  • Pepper
  • 1 Pc. Freshly squeezed lemon juice
  • 1,5 kg Lamb hip
  • 6 Pc. Fresh apples Boskoop
  • 2 Pc. Onions white
  • 1 Pc. Clove of garlic
  • Oil
  • 1 liter Cider
  • Sprigs of thyme
  • Coriander

For the beans wrapped in bacon:

  • 500 g Runner beans
  • 1 packet Bacon

For the pasta:

  • 4 Pc. Egg yolk
  • 1 Pc. Egg
  • 2 tbsp Olive oil
  • Salt
  • 400 g Flour

For the lamb:

  1. Marinate the lamb with honey, salt, pepper and lemon juice for at least 2 hours.
  2. Peel the apples and cut the onions and garlic into cubes.
  3. Fry the lamb all over in a pan with oil. Add onions and garlic. Add the chopped apples, fry briefly, deglaze with cider and bring to the boil.
  4. Season to taste with thyme, salt, pepper and coriander and simmer for 2 hours at 180 degrees (convection).
  5. Pour the stock through a sieve and stir into a sauce. Season to taste with salt and pepper.

For the beans wrapped in bacon:

  1. Boil the beans, strain and wrap in bacon / bacon. Then fry in the pan until the color you want.

For the pasta:

  1. Mix all ingredients together until you have a smooth dough. The dough can then be processed further.
