Ingredients for 1 servings:

  • 6 eggs
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 150 g flour
  • 1 packet of baking powder
  • 1 liter passion fruit juice
  • 9 tbsp sugar
  • 3 packs of pudding powder (vanilla flavor)
  • 3 cups of cream
  • 1 tbsp powdered sugar
  • 3 packs of cream stiffener
  • 1 point cookie(s) (butter cookies)
  • some liqueur (passion fruit liqueur)
  • 1 pack of cake icing (chocolate glaze), dark chocolate
  • Grease for the tray

Instructions

Working time approx. 40 minutes; Rest period approx. 1 day; Total time approx. 1 day 40 minutes

Preheat the oven to 180°C (top/bottom heat). Separate the eggs for the sponge cake. Beat the egg whites until stiff. Beat the egg yolks with the sugar and vanilla sugar until frothy. Mix the flour with the baking powder and stir into the egg yolks. Fold the stiffly beaten egg whites into the batter. Spread the batter onto a greased baking sheet and bake for approx. 15-20 minutes. Turn the finished batter out onto a kitchen towel and let it cool thoroughly. Make a pudding from the passion fruit juice, pudding powder and sugar according to the instructions. Spread the pudding onto the sponge cake base and let it cool. Whip the cream with the cream stiffener and the icing sugar until stiff and spread it over the cold pudding. Brush the bottoms of the butter biscuits with the passion fruit liqueur and place them on the cream, all biscuits directly next to each other. Melt the cake glaze and brush the biscuits with it. The cake tastes best when it has rested for a day.
