Lamb's lettuce with honey-mustard dressing and roasted pine nuts

Ingredients for 4 servings:

  • 500 g lamb’s lettuce
  • 1 tsp honey
  • 1 tsp mustard, medium hot
  • 125 ml rapeseed oil
  • 1 shot of orange juice
  • salt and pepper
  • 40 g pine nuts, roasted

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Blend the honey with a few drops of hot water until smooth, then stir in the mustard. Gradually whisk in the rapeseed oil until a creamy sauce forms. Season with orange juice, pepper, and salt. Trim the lettuce, wash it thoroughly, and spin it dry. Toss the lettuce with the dressing 10-15 minutes before serving. It should infuse a bit, but if you mix it too soon, the salad will become mushy. Sprinkle the toasted pine nuts on top at the end.
