Lamb's lettuce with mango and chicken

Ingredients for 2 servings:

  • 125 g lamb’s lettuce
  • 1 mango(s)
  • 500 g chicken breast
  • 6 sprigs of parsley
  • 6 sprigs of oregano
  • 6 sprigs of chives
  • 1 tbsp honey
  • 1 tbsp mustard
  • 1 tbsp balsamic vinegar, lighter
  • 2 tbsp olive oil
  • some water
  • 2 pinches of cayenne pepper
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Sort the lettuce, wash it, and spin it dry thoroughly. Peel the mango and cut the flesh into large cubes. Wash the chicken, pat it dry, and cut it into large pieces. Wash the herbs, spin them dry, and finely chop them. Mix a dressing from mustard, honey, balsamic vinegar, water, and olive oil. Stir in the herbs and season with cayenne pepper, salt, and pepper. Sear the chicken breast in a pan until very hot, then cook over medium heat. Arrange the lamb’s lettuce on plates, divide the mango and chicken between the pieces, and then drizzle with the dressing.
