Lamb's lettuce with oranges and pine nuts

Ingredients for 2 servings:

  • 1 orange(s)
  • 100 g lamb’s lettuce
  • 1 handful of pine nuts
  • olive oil
  • salt and pepper
  • possibly Balsamic vinegar (Crema di Balsamic vinegar)

a refreshing starter before a sumptuous main course

Wash the lamb’s lettuce and drain well (spin or dry with paper towels). Lightly toast the pine nuts in a pan. Peel the oranges, slice them, and reserve any juice that drips out. Arrange the lamb’s lettuce on a large plate and arrange the oranges nicely on top. Scatter the pine nuts over the lettuce. Drizzle with the reserved orange juice and a generous amount of olive oil, salt, and pepper. If desired, garnish or vary the dish with a little balsamic vinegar.
