Lamb's lettuce with spicy honey and mustard dressing

Ingredients for 6 servings:

  • 300 g lamb’s lettuce
  • 2 large tomatoes
  • 75 g walnuts, chopped
  • 50g bacon
  • 1 bunch of chives
  • 9 tbsp oil (walnut oil)
  • 3 tbsp vinegar (sherry vinegar)
  • 3 tbsp mustard, coarse grain or sweet
  • 2 tsp honey
  • 125 ml vegetable stock
  • 2 medium-sized garlic cloves
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cut the bacon into small pieces and fry briefly in its own juices. Remove the bacon from the pan and deglaze the pan with the walnut oil. Add the vegetable stock, sherry vinegar, mustard, and honey. Finely chop the garlic or press it into the pan. Season with salt and pepper. Keep the dressing warm on the stovetop. Clean the lamb’s lettuce, chop the tomatoes into small pieces, and arrange them on plates in portions. Arrange the bacon, chopped chives, and walnuts evenly on the plates and pour the warm dressing over them. Serve with ciabatta and/or garlic or herb baguette.
