"Latschen" potato pancakes

Ingredients for 2 servings:

  • 500 g potatoes, raw
  • 4 potatoes, boiled
  • 250 g quark
  • 1 egg(s)
  • 2 tsp salt
  • 1 ½ tsp caraway seeds
  • Rapeseed oil or sunflower oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Family recipe

Peel and grate the raw potatoes, peel the 4 cooked potatoes, let them cool slightly, and then mash them with a potato ricer. Stir the quark and egg into the potato mixture and season with salt and caraway seeds. Heat the oil in a pan and spoon about 4 of the patties into the pan. Fry until golden brown on both sides. Place the cooked patties on a plate lined with kitchen paper. The baking time for 4 patties is about 4-5 minutes. You can eat them with applesauce or blueberry compote. Do not sprinkle the patties with sugar, as this will spoil the flavor. You can also fry the patties in linseed oil.
