Ingredients for 4 servings:

  • 20 small potatoes
  • 4 tbsp olive oil
  • Salt
  • Spice(s) as desired

Instructions

Quick and elegant side dish to grilled food, fish or artichokes.

Wash and peel the potatoes. Halve them lengthwise and, similar to cutting onions, slice thinly, but do not cut all the way through so that the individual leaves do not fall apart. Place the potatoes in a shallow baking dish and press the compartments apart slightly. Sprinkle with salt and oil. Bake in a preheated oven at 200°C for 20-30 minutes until golden brown. Brush the potatoes with oil from time to time to prevent them from drying out. Once the potatoes are crispy, sprinkle with spices or herbs to taste and serve. Served with some herb quark and a cocktail tomato, this side dish also makes a delicious starter.
