Ingredients for 4 servings:
- 8 tomatoes, fully ripe
- 3 sprigs of thyme
- 12 garlic cloves
- olive oil
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour
Preheat the oven to 220 degrees Celsius (top/bottom heat). Wash and halve the tomatoes, carefully cutting out the tough stems. Wash the thyme and cut into several pieces. Peel the garlic cloves and leave them whole. Place the tomatoes, open-side up, in a baking dish. Stuff the thyme and garlic among the tomatoes and drizzle well with olive oil, salt, and pepper. Bake for about 50 minutes, until the tomatoes are lightly browned around the edges. After roasting, remove the thyme sprigs and serve. The tomatoes are delicious both cold and warm.
