Leberkäse pan with broad beans

Ingredients for 4 servings:

  • 500 g potatoes, from the previous day
  • 100 g bacon
  • 250 g beans, thick
  • 500 g Leberkäse
  • 2 onions, red
  • 2 cloves garlic
  • 2 tbsp butter
  • 1 tsp pepper, coarse
  • 3 sprigs of marjoram and thyme (alternatively 1 tsp dried)
  • salt and pepper
  • Paprika powder
  • 4 eggs

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Slice the potatoes from the previous day. Peel the onion and slice into rings, finely chop the garlic. Cut the meatloaf into strips. Finely chop the herbs. Knead the butter with the cracked pepper and then heat it in a non-stick pan. Add the potato slices to the pan and fry. Add the onion and garlic to the potatoes with the bacon and sauté. Season with salt and paprika. Add the meatloaf and beans to the potatoes and fry for another 5 minutes. Stir in the chopped herbs. Heat a little butter in a second pan and fry a fried egg for each person. Divide the meatloaf pan between plates and top with the fried egg. Serve with lamb’s lettuce and radish. If you like, you can serve it with farmhouse bread and a cold beer.
