Ingredients for 4 servings:

  • 1 large onion(s)
  • 100 g bacon, diced
  • 500 g potatoes, cooked
  • 300 g sausage, city sausage (1/2 ring), Franconian, alternatively meat sausage
  • 3 eggs
  • 300 g sour milk, or more, amount as desired
  • 1 tbsp Clarified butter, for frying
  • 2 tbsp parsley, chopped
  • salt and pepper

Simple, delicious fried potato dish that brings back childhood memories!

Dice the onion, slice the potatoes, skin the sausage, halve it lengthwise, and slice it. Beat the eggs. Fry the bacon cubes in the clarified butter in a pan, add the onions and fry them. Then add the potatoes and fry them. The potatoes and onion cubes can brown a little. Add the sausage, mix everything well, and pour the beaten eggs over them. Stir until the eggs are set. Season with salt and pepper and sprinkle with the chopped parsley. We always ate it with sour milk. I know it’s not a great kitchen, but I loved this recipe as a child and still appreciate it today. I particularly like the unusual combination with the sour milk. True to the motto: simple but incredibly delicious! Enjoy your meal and have fun cooking it.
