Leberkäse salad

Ingredients for 3 servings:

  • 200 g Leberkäse, fine
  • 70 g peas, frozen
  • 1 pepper(s), red, approx. 150 g
  • 125 g gherkins
  • 2 spring onions, possibly 3
  • possibly parsley, freshly chopped
  • 25 ml sunflower oil
  • 1 tbsp balsamic vinegar, lighter
  • ½ tsp mustard
  • Salt and pepper, white
  • Paprika powder, sweet

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

Cut the Leberkäse into fairly large cubes. Place the frozen peas in a bowl and pour plenty of boiling water over them to thaw. After about 5 minutes, pour them into a sieve and let them drain. Wash, deseed, and dice the bell pepper, slice the gherkins, and trim and slice the spring onion. In a small bowl, combine the dressing ingredients. Combine the ingredients in a bowl with the salad ingredients and mix. Let the Leberkäse salad sit in the refrigerator for 30 minutes. Tip: If you like, you can also stir in some freshly chopped parsley at this point.
