Leek and mushroom vegetables with apple

Ingredients for 4 servings:

  • 500 g leek
  • 1 tbsp butter
  • 2 tbsp olive oil
  • 200 g mushrooms
  • 1 onion(s)
  • black pepper
  • 2 tbsp soy sauce
  • 1 apple
  • 1 tbsp lemon juice
  • 3 tbsp olive oil
  • cardamom

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

sweet – sour

Trim the leeks and cut into 3cm pieces. Blanch in boiling water for 3 minutes, rinse with cold water, and drain. Heat the butter and olive oil and sauté the leeks with the mushroom quarters and the roughly chopped onion for 1 minute. Season with pepper and cardamom, deglaze with soy sauce, and simmer on low heat for 5 minutes. Allow to cool slightly. Stir in the grated apple, season with salt if desired, and then season with the lemon juice and olive oil. Serve with mashed potatoes or rice.
