Ingredients for 4 servings:

  • 150 g butter
  • 300 g flour
  • 1 kg leek
  • 250 g smoked bacon, finely diced
  • 500 ml vegetable stock
  • 4 eggs
  • 250 ml cream
  • salt and pepper
  • nutmeg

Leek Quiche

Make a shortcrust pastry with 120 grams of butter, 270 grams of flour, and a pinch of salt. Let it rest in the refrigerator for about half an hour. Clean the leek and cut it into rings. Fry the smoked bacon cubes with the remaining butter, add the leek rings, let them simmer slightly, then pour in the broth. Season with pepper, nutmeg, and a little salt. Continue cooking. Roll out the prepared pastry and line a springform pan, pressing up one edge. Strain the leek and bacon cubes and place them on the pastry. In another bowl, whisk the eggs, cream, and the remaining flour until smooth, season, and pour over the leek and bacon mixture. The strained broth can be used for other purposes. Bake the leek tart in the oven at 200 degrees Celsius for about 40 minutes. Serve hot. Variation: Make it with sauteed onions and/or grated cheese as a topping. A little more butter makes the pastry easier to make. Just try it out.
