Ingredients for 4 servings:

  • 200 g flour
  • 100 g butter
  • 4 tbsp water
  • 750 g leek
  • 1 onion(s)
  • 2 tbsp butter
  • 150 g ham
  • 250 ml cream
  • 2 eggs
  • 150 g cheese (Gouda)
  • salt and pepper
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 45 minutes

Make a dough from the flour, butter, and water and refrigerate it for 30 minutes. Preheat the oven to 200°C (top/bottom heat). Wash and trim the leek, halve it, and cut it into strips. Dice the onion and sauté briefly in the butter, add the leek, and sauté everything for five minutes. Dice the ham and add it to the leek. Grate the Gouda cheese and mix it with the cream, salt, and pepper. Then add the leek and ham mixture and mix everything together. Pour the chilled dough into a greased 26 cm springform pan. Then pour the filling onto the dough. The leek tart must now be baked on the lowest rack in the oven for about 45 minutes.
