Leek casserole

Ingredients for 2 servings:

  • 2 onions
  • 3 stalk(s) leeks
  • 4 potatoes
  • 2 tbsp butter
  • 1 cup of cream
  • 125 ml vegetable stock
  • 1 bunch of parsley
  • nutmeg
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and finely dice the onions. Wash the leek and slice it into rings. Peel the potatoes and thinly slice them. Grease a casserole dish and layer the potatoes and leek in it, then sprinkle with the onions. Mix the cream with the broth, season generously with salt, pepper, and nutmeg, and pour over the vegetables. Bake in a preheated oven at 180°C for about 60 minutes. Sprinkle with chopped parsley before serving. Tip: If you like, you can use white wine instead of vegetable broth.
