Leek – Ham – Pepper – Casserole

Ingredients for 2 servings:

  • 6 stalk(s) leeks, not too thick
  • 4 slice(s) ham, cooked without fat
  • 2 red bell peppers
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 tbsp olive oil
  • 400 g tomatoes, chopped
  • pepper
  • Salt
  • Herbs of Provence
  • 50 g grated cheese up to 30% fat

Suitable for WW, 5 PP per person

Clean and wash the leeks, and cut them into approximately 10 cm long pieces. Boil them in salted water for about 5 minutes, then rinse and drain. Halve the ham slices and wrap one around each leek. Wash and dice the bell peppers, finely dice the onion and garlic. Heat the oil in a non-stick pan and sauté the onion, garlic, and bell pepper. Add the tomatoes, bring to a boil, and season with salt, pepper, and herbs. Place the tomato sauce and leeks in a baking dish, sprinkle with cheese, and bake in a preheated oven (approx. 175°C fan-assisted) for 20-25 minutes. Serve with rice or baguette (charge extra!). WW – 5 Pro points per serving.
