Leek vegetables with red lentils

Ingredients for 4 servings:

  • 3 stalk(s) leeks
  • 150 g lentils, red
  • 1 tsp turmeric
  • 1 tsp vegetable broth, instant
  • 1 tsp ghee
  • 300 ml water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Cut the leek into thin rings, wash thoroughly, and then let it drain slightly. Wash the red lentils thoroughly. Heat the ghee in a pan, add the leek, and sweat. Then add the red lentils and the water. Cover and simmer gently for about 25 minutes. After about 5 minutes, add the spices. Check frequently to see if there is still enough water in the pan, as the red lentils will absorb the liquid. We like the dish best when almost all the water has been absorbed. Season to taste at the end. Tastes delicious with salted potatoes or on its own.
