Lemon balm pesto with wild garlic

Ingredients for 1 servings:

  • 4 tbsp lemon balm, finely chopped
  • 4 tbsp wild garlic, finely chopped
  • 2 tbsp peanuts, salted, roasted
  • 1 tsp, heaped hard cheese, grated, e.g. Parmesan
  • n. e.g. chili flakes, mild, e.g. B. Pul Biber
  • n. B. Salt
  • some lemon zest
  • 50 ml olive oil, mild, cold-pressed

Working time approx. 10 minutes; Total time approx. 10 minutes

a “must have” with pasta

Roughly crush the finely chopped herbs and peanuts in a mortar and pestle. Add the hard cheese, chili flakes, and lemon zest, and grind or pound into a paste with olive oil. Season with salt, if desired. It will keep for several weeks in the refrigerator, covered with a layer of oil and uncovered. The pesto is delicious with pasta. Pour the pesto over the cooked pasta in a bowl, toss thoroughly to combine, and serve immediately.
