Ingredients for 1 servings:

  • 300 g sugar
  • 4 lemon(s), juice and grated zest
  • 150 g butter, melted
  • 1 jar milk
  • 4 eggs, separated
  • 1 handful of pine nuts
  • 1 lemon(s), thinly sliced
  • 1 packet of baking powder
  • powdered sugar

great, refreshing lemon cake

Beat the egg yolks with the sugar for about 5 minutes until light and fluffy, then add the lemon zest and juice, flour, baking powder, butter, milk, and pine nuts. Beat the egg whites until stiff peaks form and fold in. Mix until a smooth batter forms. Pour into a springform pan lined with baking paper and bake at 180 degrees Celsius for about 40 minutes. Let cool, dust with powdered sugar, and top with thin lemon slices.
