Easy Tiramisu Cake

Ingredients for 1 servings:

  • 200 g ladyfingers
  • 100 ml coffee, cold, strong
  • 2 tbsp milk
  • 2 tbsp Amaretto
  • 500 g quark (low-fat quark)
  • 250 g mascarpone
  • 2 tbsp milk
  • 1 cup of cream
  • e.g. sugar or sweetener
  • Cocoa powder, for dusting

Line the bottom of a springform pan with sponge cakes. Mix together the milk, coffee, and Amaretto. Soak the sponge cakes in the liquid. Mix together the mascarpone, quark, sugar or sweetener, and milk. Whip the cream until stiff and fold in. Spread the cream on the soaked cake base and top with the remaining sponge cake. Refrigerate the cake. Dust with cocoa powder just before serving. If you’re not concerned about calories, you can swap the proportions of quark and mascarpone, using 500 g of mascarpone and 250 g of low-fat quark. This will make the tiramisu cake taste a bit richer and more “true to the original.”
