Ingredients for 2 servings:

  • 400 g chicken breast fillet(s)
  • 1 large lemon(s) (unsprayed, organic)
  • 2 medium-sized garlic cloves
  • 50 ml olive oil
  • Salt and pepper or chili powder
  • herbs of your choice (rosemary, sage, basil, etc.)
  • 400 g potatoes, new, cooked in the skin (optional)

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Oven-baked chicken breast

Thinly grate the lemon zest. Peel and finely chop the garlic, or press it through a press (it’s a matter of faith). Squeeze the lemon. Mix the lemon juice, lemon zest, and garlic with roughly equal amounts of olive oil, preferably in a screw-top jar. Shake vigorously. Season with a good pinch of salt and a little pepper or chili. If you like, you can also add fresh, chopped herbs. Place the chicken breast in an oiled baking dish and pour the sauce over it. Then roast in a preheated oven at 200°C for about 20 to 40 minutes (until a brown crust forms). You can also add cooked new potatoes to the dish, brush them with the marinade, and bake them with the sauce. This is also easy to prepare and then just quickly pop in the oven.
