Ingredients for 4 servings:

  • 1 chicken
  • 8 large potatoes
  • 2 m.-large zucchini
  • 1 small eggplant(s)
  • 3 carrots
  • 1 large onion(s)
  • 1 red bell pepper(s)
  • 3 garlic cloves
  • 20 olives of your choice
  • 1 lemon(s), untreated
  • olive oil
  • Thyme
  • salt and pepper
  • Paprika powder, sweet
  • curry powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the chicken into nice pieces, wash, and pat dry. Line a deep baking sheet with aluminum foil. Season the chicken pieces with salt, pepper, curry powder, and paprika and arrange them on the baking sheet. Peel the potatoes and cut them into fairly small pieces. Trim the carrots, zucchini, eggplant, onion, and bell pepper, peeling if necessary and also cutting them into fairly small pieces. Peel the garlic and slice them. Arrange all the chopped vegetables on the baking sheet. Add the olives (any type will do). Halve the lemon, squeeze the juice from one half, and drizzle it over the ingredients in the baking sheet. Slice the other half and add it to the baking sheet. Season everything well with salt, pepper, curry powder, thyme, and paprika. Finally, add a little water to the dish and drizzle with olive oil. Place in the oven at 200°C for 1 1/2 hours. This goes wonderfully with ciabatta or herb baguette.
