Lemon cream with spaghetti and shrimp

Ingredients for 4 servings:

  • 400g spaghetti
  • 200 g cream
  • 200 g shrimp(s)
  • 4 spring onions
  • 1 tsp butter
  • 3 tbsp lemon juice
  • 125 ml vegetable stock
  • salt and pepper
  • Basil, a few leaves for garnishing

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook spaghetti al dente according to the package instructions. Drain through a sieve. Trim the spring onions and cut into rounds. Sauté them in melted butter in a pan. Add the cream, vegetable stock, and lemon juice and simmer until the liquid has almost evaporated. Season with salt and pepper. Stir in the shrimp. Arrange the spaghetti on plates. Pour the sauce over the spaghetti and serve garnished with basil leaves. Super quick and also delicious with other pasta dishes like penne, rigatoni, farfalle, etc., or even with rice.
