Ingredients for 6 servings:
- 1 pineapple
- 1 mango(s)
- 1 bell pepper(s), yellow
- 300 g yellow tomatoes
- 55 g chili pepper(s) (Lemon Drop chilies or any yellow chilies)
- 200 ml water
- 300 ml balsamic vinegar, lighter
- 250 ml orange juice
- 250 g brown cane sugar
- 10 g fresh ginger
- ½ tsp cumin
- 1 tsp coriander
- 3 cloves garlic
- Salt
- 3 limes
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes
Prepare the pineapple, mango, bell peppers, tomatoes, garlic, and chilies, chop them, and place them together in a large pot. Add the water, balsamic vinegar, orange juice, sugar, and all the spices. Bring to a boil, simmer for about 1 hour, reducing the liquid during the process, and then puree. Finally, add the juice of 3 limes. Now everything is ready to be poured into suitable containers.
