Ingredients for 1 servings:

  • 3 large egg yolks
  • 125 g sugar
  • 1 lemon(s), untreated (grated peel and juice)
  • 3 drops flavoring (lemon flavor)
  • 1 packet of vanilla sugar
  • 1 pinch of baking powder
  • 200 g almond(s), ground
  • 100 g powdered sugar
  • Pistachios, chopped

Working time approx. 30 minutes; Total time approx. 30 minutes

Whisk the egg yolks with the sugar, vanilla sugar, lemon zest, and lemon flavoring until frothy and the sugar is dissolved. Then knead in the almonds and baking powder, using your hands if necessary on a work surface. Dust the work surface with powdered sugar, then roll out the dough thinly and cut out hearts using cookie cutters. Place on a baking sheet lined with baking paper and bake in a preheated oven at 175°C (350°F) for 6-8 minutes. While the hearts are still warm, cover them thickly with powdered sugar and lemon glaze and decorate with chopped pistachios.
