Lemon-marinated mushrooms

Ingredients for 6 servings:

  • ¼ cup vinegar (rice vinegar)
  • 2 tbsp sugar
  • 2 tbsp lime juice, freshly squeezed
  • 1 tbsp soy sauce
  • ¾ tbsp Pepper, red, dried, hot,
  • ¼ tsp salt
  • 4 garlic cloves
  • 1 tsp orange peel, grated
  • 2 tsp olive oil
  • 1 tsp oil (sesame oil)
  • ½ tsp lemon zest, grated
  • 500 g mushrooms, halved
  • 2 tbsp parsley, freshly chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine the first 7 ingredients in a small saucepan and bring to a boil. Boil for 1 minute, or until the sugar has dissolved. Remove from heat and add the orange zest, oils, and lemon zest. Mix the vinegar marinade with the halved mushrooms. Marinate overnight with the lid on. Add parsley and serve.
