Ingredients for 1 servings:

  • 3 egg whites
  • 375 g powdered sugar
  • 350 g almond(s), grated
  • 1 ½ lemon(s), untreated
  • Sugar (granulated sugar) for the work surface

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Makes approximately 30 stars, depending on the size of the cookie cutter. Preheat oven to 140 degrees Celsius (top/bottom heat). Brush a baking sheet with butter and lightly dust with flour, or line with baking paper. Thoroughly wash an organic lemon for the zest. Grate the zest of 1 lemon and juice 1.5 lemons. Beat the egg whites until stiff peaks form, gradually adding the sugar and stirring until dissolved. Add the lemon juice and zest. Place 5-7 tablespoons of this mixture into a small container for the icing and store until ready to use. Add the almonds to the remaining egg white and lemon mixture and mix well. Sprinkle the work surface with a little granulated sugar and roll out the dough to a thickness of approximately 4 mm. Cut out the stars and spread the icing evenly over them. Place the stars on the prepared baking sheet and bake for approximately 20 minutes. If the dough is not firm enough, add ground almonds until it is easy to work with.
