Lentil Rice with Fried Bananas
The perfect lentil rice with fried bananas recipe with a picture and simple step-by-step instructions.
- 125 g Long grain rice
- 1 pole Leek
- 250 g Carrots
- 3 tbsp Oil
- 100 g Lentils red
- 350 g Vegetable broth
- 20 g Butter
- 4 Baby bananas
- Salt and pepper
- Lemon juice
- Clean the leek, cut in half lengthways, cut the white and light green into small strips. Wash and clean the carrots and cut lengthways in half. Cut the halves crosswise into small pieces.
- Heat 2El oil in a large saucepan. Sauté leek and carrots in it over medium to high heat for about 2 minutes. Add rice and lentils and sauté briefly. Top up with the stock and bring to the boil, covered. Let the lentil rice swell over a mild heat for about 12-15.
- Heat the rest of the oil (1El) in a pan, peel the bananas, cut in half lengthways and fry them on the cut surface for 2-3 minutes over a medium heat. Carefully turn the bananas and fry for another 1-2 minutes.
- Mix in the lentil rice, season with salt and pepper and serve with the fried bananas. Serve drizzled with lemon juice if you like.
