Working time approx. 20 minutes; Total time approx. 20 minutes
Since I can never make Mama’s lentil soup like this, here is my own recipe
Peel the onions and dice them into small cubes. Remove the rind from the bacon and cut into approximately 1 cm pieces. Scrape and dice the carrots. Trim, halve, and half-ring the leeks. Fry the bacon in a large pot until translucent, add the diced onions, and sauté until golden brown. Add water and a pinch of salt. Bring to a boil, then add the vegetables and simmer everything in a covered pot over reduced heat for 15-20 minutes. Drain the lentils and add them to the soup. Add the sliced sausages. Heat through and season with vinegar, tomato paste, salt, and pepper.
