Lettuce hearts with nectarines

Ingredients for 2 servings:

  • 2 lettuce hearts
  • 2 nectarines
  • 4 walnuts
  • 200g mozzarella
  • 100 ml orange juice
  • 1 dashes lemon juice
  • 5 tbsp olive oil
  • 1 sprig(s) mint, fresh
  • salt and pepper

Wash and chop the lettuce hearts thoroughly. Smaller leaves can be left whole. Roughly chop the walnuts and lightly toast them in a pan. Do not let them get too dark, or they will become bitter. Roughly chop the mint leaves as well. For the dressing, mix the orange juice, lemon juice, and olive oil well. Season with salt and pepper, and add the mint last. Now, first wash the nectarines and then cut them into wedges. Slice the mozzarella and marinate them briefly in the dressing with the nectarines. The fruit acid in the dressing prevents the nectarines from turning brown. Finally, arrange the lettuce hearts on a platter with the nectarines, walnuts, and mozzarella and pour the dressing over them. Grilled pork goes well with this.
