Ingredients for 4 servings:
- 4 leeks without the tough, green end
- ½ jar pickled gherkins, e.g. “Knax” or gherkins
- 2 sour apples, e.g. Elstar, Braeburn or similar.
- 1 pack of cooked ham or 1/2 – 1 ring of meat sausage
- 170 ml salad mayonnaise
- 1 pinch(s) black pepper from the mill
- 3 tbsp cucumber water

with ham and apple
Peel the outer layer from the leeks, trim off the green end, halve lengthwise, and then cut into very fine strips. The end can still be used for soup or stew, but it is too tough for this. Core the apples, quarter them, then cut them crosswise and also cut into fine strips. Take half of the cucumbers out of the jar, trim off the tough ends and also split them lengthwise down the middle, then cut the halves into fine strips. Cut the sausage or ham into small cubes. Mix everything together, then add the cucumber juice, pepper, and salad mayonnaise and mix everything well. Leave to marinate in the refrigerator for at least an hour. This goes well with a snack or simply with a piece of warm baguette and herbal tea.
