Ingredients for 3 servings:

  • 1 kg watermelon(s)
  • 100 g arugula
  • 200 g feta cheese made from sheep’s milk
  • 20 g pine nuts
  • 2 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Lightly toast the pine nuts in a dry pan. Meanwhile, trim the watermelon and cut it into bite-sized pieces. Cut the feta into similarly sized pieces. Place the prepared ingredients in a bowl along with the washed arugula. Drizzle with olive oil, salt, and pepper, and toss to combine. All quantities are approximate. Whether you use more or less of one or the other is of secondary importance: the result is a deliciously surprising, summery refreshment, especially if the watermelon has been refrigerated beforehand.
